Ingredients/Components
- milk - 2 c
- salt - 1 tsp
- flour - 1/3 c
- butter - 1/4 c
- diced green pepper - 1/4 c
- can sliced mushrooms - 1 oz
- chopped pimento - 2 Tbsp
- shredded Swiss cheese - 1 c
- large head cauliflower - 1 item
How to make cauliflower:
Cooking Time: 15 minutes. Temperature: 325°.Break cauliflower into medium-size flowerets. Cook in boiling water until crisp, about 10 minutes. Drain well and set aside. In a 2-quart pan, saute mushrooms and green pepper in butter until tender. Blend in flour. Gradually stir in milk. Cook, stirring constantly, over medium heat, until mixture is thick. Stir in salt, cheese and pimento. Place half of the cauliflower in buttered 2-quart casserole dish. Cover with half the sauce. Add remaining cauliflower. Top with sauce. Bake at 325° for 15 minutes. Makes 8 servings.
