Carrot salad
Ingredients/Components
- salt - 1/8 tsp
- vegetable oil - 2 Tbsp
- cider vinegar
- shredded carrots
- ground ginger - 1/8 tsp
- chopped pecans or walnuts - 2 Tbsp
- finely chopped onion - 1 Tbsp
- pineapple juice - 2 Tbsp
- unpeeled red apple, chopped - 1 1/2
How to make carrot salad:
Combine carrot, apple and onion in a bowl; toss gently. Set aside. Combine oil, juice, vinegar, salt and ginger, stirring well. Pour dressing over carrot mixture; toss gently. Cover and chill.
