Ingredients/Components

  • salt - 1/8 tsp
  • vegetable oil - 2 Tbsp
  • cider vinegar
  • shredded carrots
  • ground ginger - 1/8 tsp
  • chopped pecans or walnuts - 2 Tbsp
  • finely chopped onion - 1 Tbsp
  • pineapple juice - 2 Tbsp
  • unpeeled red apple, chopped - 1 1/2

How to make carrot salad:

Combine carrot, apple and onion in a bowl; toss gently. Set aside. Combine oil, juice, vinegar, salt and ginger, stirring well. Pour dressing over carrot mixture; toss gently. Cover and chill. Add pecans and toss gently just before serving. Yields 4 servings.
