  • baking powder - 2 tsp
  • soda - 2 tsp
  • cinnamon - 2 tsp
  • salt - 1 tsp
  • mace - 1 tsp
  • grated carrots - 3 c
  • chopped pecans - 1 c
  • Add eggs; beat well
  • pkg - 1 oz
  • powdered sugar - 1 lb
  • lemon extract - 1 tsp

How to make carrot cake:

Mix sugar and oil together. Add eggs; beat well. Sift dry ingredients together. Add carrots and nuts; beat well. Bake in 3 greased and floured cake pans for 25 to 35 minutes at 350°.Icing:1/2 stick oleo1 (8 oz.) pkg. cream cheese1 lb. powdered sugar1 c. chopped pecans1 tsp. lemon extract Cream together the ingredients.
