Ingredients/Components
- sugar - 2 c
- oil
- eggs - 4 item
- flour - 2 c
- soda - 2 tsp
- cinnamon - 2 tsp
- finely grated carrots - 3 c
- shredded coconut - 1/2 c
- chopped nuts - 3/4 c
- salt - 1 tsp
- pkg
- sifted confectioners sugar
- butter - 1/4 c
- vanilla - 1 tsp
How to make carrot cake:
Frosting:1 (3 oz.) pkg. cream cheese1 3/4 c. sifted confectioners sugar1/4 c. butter1 tsp. vanilla Mix sugar, oil and eggs until thoroughly blended. Sift together flour, soda, salt and cinnamon. Add to first mixture and beat until smooth. Stir in carrots, coconut and nuts. Pour into greased 13 x 9-inch pan. Bake at 325° for 55 minutes.Frosting: Combine ingredients and mix until smooth.
