  • grated carrots - 3 c
  • sugar - 2 c
  • eggs - 4 item
  • chopped pecans - 1/2 c
  • all-purpose flour - 3 c
  • baking soda - 2 tsp
  • cinnamon - 1 tsp
  • salt - 1/2 tsp
  • soda - 2 tsp
  • Frosting:1 stick oleo
  • box powdered sugar - 1 item
  • vanilla - 1 tsp
  • pkg - 1 oz
  • coconut - 1 c

How to make carrot cake:

Frosting:1 stick oleo1 box powdered sugar1 tsp. vanilla1 (8 oz.) pkg. cream cheese1 c. chopped pecans1 c. coconut Mix ingredients as listed. Bake 30 to 45 minutes or until brown at 350°.
