  • cinnamon - 2 tsp
  • eggs - 4 item
  • vanilla - 2 tsp
  • pkg
  • salt - 1 tsp
  • chopped nuts - 1 c
  • stick margarine - 2/3 item
  • baking powder - 2 tsp
  • baking soda - 1 tsp
  • all-purpose flour - 2 c
  • salad oil
  • box powdered sugar - 1 item
  • pecans, chopped - 1 c
  • grated raw carrots - 3 c
  • can crushed pineapple chunks or crushed, drain juice - 1 oz

How to make carrot cake:

Frosting:1 (8 oz.) pkg. cream cheese1 box powdered sugar2/3 stick margarine1 c. chopped nuts2 tsp. vanilla Sift together flour and next four ingredients. Set aside. In a large bowl, mix oil and sugar. Mix well. Add 1/2 of flour mixture and blend. Add remaining flour alternately with eggs, mixing well after each. Add carrots, pineapple and nuts. Makes one 10-inch tube or three 9-inch layer pans. Lightly grease and flour pans. Bake in a 325° oven. Bake 3 layers for 25 minutes. Bake in a tube pan for 1 hour.
