  • pkg - 8 oz
  • salt - 1/2 tsp
  • evaporated milk - 1 c
  • stick butter - 1 item
  • cake flour - 3 c
  • sticks butter or margarine - 3 item
  • Grease and flour large pound cake pan

How to make caramel pound cake:

Preheat oven at 350°. Grease and flour large pound cake pan. Blend softened butter, Philadelphia cream cheese, vanilla and sugar. Add eggs, one at a time. Next, add sifted flour with salt. Mix at medium speed until well blended. If mix becomes too thick, you can add milk, a tablespoon at a time, until desired consistency is obtained. Bake at 350° for 1 1/2 hours or until done. Sometimes what I'll do at the end of the scheduled baking time, if the cake still isn't done, reduce the heat to 325° and continue to bake until done. Allow to cool about 10 minutes before you remove cake from pan.Icing:2 c. granulated sugar1 c. evaporated milk1 stick butter1 tsp. vanilla On low to medium heat, pour 1 cup of milk and 1 3/4 cups of sugar into saucepan. Stir constantly. Let this cook about 20 to 30 minutes.

In another saucepan, melt 1/4 cup sugar. Brown to the desired color, but be careful not to burn. While sugar is browning, you will need to stir it constantly. When melted and browned, add to other sugar mixture. The first sugar mixture must be boiling before adding the browned sugar. Reduce to medium heat after sugar is added. Continue stirring for 10 to 15 minutes. If sugar lumps, continue to stir on medium heat. Add margarine and vanilla. Continue to cook about 5 additional minutes, stirring constantly. Remove from heat and frost cake immediately. Enjoy!
