Ingredients/Components

  • chicken broth or 2 chicken bouillon cubes, dissolved in water
  • long grain rice - 1 c
  • oil - 1/4 c
  • beaten egg - 1 item
  • cleaned shrimp - 1 lb
  • cubed, cooked chicken - 1 item
  • cubed, cooked pork, beef or ham - 1 item
  • salt and pepper - 1 item
  • finely chopped green onions tops, too - 1/4 c
  • soy sauce
  • slivered almonds - 1 item

How to make cantonese fried rice:

Bring broth to a boil. Add rice. Cover and cook until rice is done. In a large skillet, place the oil and egg; cut egg into strips as it cooks. Add shrimp, chicken and pork, about 3/4 cup altogether. Add cooked rice and season with salt, pepper, green onions and soy sauce. Blend together and cook over low heat for 7 to 8 minutes. Top with slivered almonds.
