Ingredients/Components

  • fresh yellow squash or 2 16 oz
  • salt and pepper - 1 item
  • jar pimentos, chopped - 1 oz
  • medium onion, chopped - 1 item
  • sour cream - 1 c
  • can cream of chicken soup - 1 item
  • small carrots, grated - 4 item
  • Pepperidge Farm cornbread stuffing or herb stuffing - 1 pkg
  • butter, melted - 1/2 c

How to make squash casserole:

Cook squash in small amount of water until tender; drain and mash. Season to taste. Stir in remaining ingredients, reserving half of the stuffing which has been mixed with melted butter. Line a casserole with reserved stuffing. Set aside enough stuffing to sprinkle on top. Fill casserole with squash mixture and top with remaining stuffing. Bake at 350° for 30 minutes. May be prepared the day before and baked when needed.
