Squash casserole
Ingredients/Components
- fresh yellow squash or 2 16 oz
- salt and pepper - 1 item
- jar pimentos, chopped - 1 oz
- medium onion, chopped - 1 item
- sour cream - 1 c
- can cream of chicken soup - 1 item
- small carrots, grated - 4 item
- Pepperidge Farm cornbread stuffing or herb stuffing - 1 pkg
- butter, melted - 1/2 c
How to make squash casserole:
Cook squash in small amount of water until tender; drain and mash. Season to taste. Stir in remaining ingredients, reserving half of the stuffing which has been mixed with melted butter. Line a casserole with reserved stuffing. Set aside enough stuffing to sprinkle on top. Fill casserole with squash mixture and top with remaining stuffing. Bake at 350° for 30 minutes.
