Canadian cheese soup
Ingredients/Components
- milk - 1 qt
- butter or margarine - 1/4 c
- salt - 2 tsp
- flour - 1/4 c
- cornstarch
- soda - 1/8 tsp
- grated Cheddar cheese - 1 c
- finely diced celery - 1/2 c
- finely diced carrots - 1/2 c
- finely diced onions - 1/2 c
- parsley, chopped fine - 2 Tbsp
- chicken stock or canned chicken broth - 1 qt
How to make canadian cheese soup:
Melt butter in 3-quart glass casserole. Add onions, carrots and celery. Cover and cook with microwave 12 minutes or until vegetables are tender, stirring every 2 minutes. Add flour and cornstarch. Cook 1 1/2 minutes or until bubbly. Add stock and milk. Stir until smooth. Cook 18 minutes, stirring after 12 minutes. Add soda, cheese and salt. Cook 3 minutes. Sprinkle parsley on top to serve.
