Blueberry buttermilk biscuits
Ingredients/Components
- sugar - 1/2 c
- cinnamon - 1/4 tsp
- salt - 1 tsp
- nutmeg - 1/8 tsp
- buttermilk - 3/4 c
- baking powder - 1 Tbsp
- baking soda - 1/4 tsp
- shortening - 1/3 c
- all-purpose flour - 2 c
- egg, beaten - 1 item
- fresh or frozen blueberries - 1/2 c
- grated orange rind - 1 tsp
- butter or oleo, melted - 3 Tbsp
How to make blueberry buttermilk biscuits:
Combine flour, baking powder, soda, salt, 1/2 cup sugar and orange rind in a medium bowl; cut in shortening with a pastry blender until mixture resembles coarse meal. Combine egg and buttermilk. Add to flour mixture, stirring just until dry ingredients are moistened. Stir in blueberries. Turn dough out onto a lightly floured surface, knead 4 or 5 times. Roll dough to 1/2-inch thickness. Cut with a 2 1/2-inch biscuit cutter. Place on lightly greased baking sheet. Bake at 400° for 15 minutes or until golden brown.Combine butter and remaining ingredients, stirring well. Brush on warm biscuits. Yield: 15 biscuits.
