  • sugar - 1/2 c
  • cinnamon - 1/4 tsp
  • nutmeg - 1/8 tsp
  • baking powder - 1 Tbsp
  • baking soda - 1 tsp
  • all-purpose flour - 2 c
  • egg, beaten - 1 item
  • blueberries - 1 c
  • orange rind optional - 1 tsp
  • buttermilk * - 1/2 c
  • oil * - 1/3 c
  • For 1/3 cup shortening use 3/4 cup buttermilk

How to make blueberry buttermilk biscuits:

*Use less buttermilk with oil and more with shortening. For 1/3 cup shortening use 3/4 cup buttermilk.

Sift dry ingredients. Combine egg, shortening and buttermilk. Add to flour mixture. Coat blueberries with flour; stir into biscuits. Turn onto floured surface and knead 4 or 5 times. Roll out biscuits and top with topping.Topping:3 Tbsp. butter3 Tbsp. sugar1/4 tsp. cinnamon1/8 tsp. nutmeg Bake at 400° about 25 minutes.
