Black bean soup
Ingredients/Components
- salt - 1 Tbsp
- water - 2 qt
- cloves garlic, minced - 4 item
- bay leaf - 1 item
- oregano - 1 tsp
- ground cumin - 1/4 tsp
- black pepper - 1/2 tsp
- black beans - 1 lb
- green peppers, cut in strips - 2 item
- medium size onions, chopped fine - 3 item
How to make black bean soup:
Before washing beans, spread on flat surface and pick broken beans out. Look for foreign particles such as tiny little stones. Wash beans well and soak overnight in 2 quarts of water.Next day, pour beans into 4-quart soup kettle and boil in same soaking water. Cover and cook on medium heat.
Meanwhile, in a skillet, saute onions and green peppers in olive oil until light golden. Add crushed oregano, bay leaf, cumin and minced garlic. Add to beans, stirring well. Add salt and pepper and cook slowly until beans are tender. Serve over white rice and top with chopped onions. Serves 4.
