Black bean and corn salad
Ingredients/Components
- salt and pepper to taste - 1 item
- olive oil - 3 T
- green onions, diced - 2 item
- can white corn, drained - 1 item
- or 2 tomatoes, diced - 1 item
- , drained and rinsed - 1 can
- can hearts of palm, sliced or can of artichoke hearts/bottoms - 1 item
- small red onion, diced optional - 1 item
- cilantro, chopped finely - 1 item
- juice of 1 or 2 limes
How to make black bean and corn salad:
Mix vegetables together. Stir in oil, lime juice. Season with salt and pepper to taste. Chill and let marinade for several hours.Note: This is a lovely salad served on a bed of spinach leaves.
