Black bean soup
Ingredients/Components
- salt - 1 tsp
- water - 10 c
- chili powder - 1 tsp
- cans chicken broth - 2 1/2
- oregano - 1 tsp
- onion, chopped - 1 item
- diced ham - 1 c
- stalks celery, chopped - 2 item
- cayenne pepper - 1 tsp
- cumin - 2 tsp
- carrot, chopped - 1 item
- jalapeno peppers, seeded and chopped - 3 item
- snipped fresh cilantro - 2 Tbsp
- carton sour cream low-fat - 1 oz
- dried black beans, washed, soaked overnight and drained - 2 c
How to make black bean soup:
In a large, heavy soup pot, place all ingredients except sour cream. Bring to a boil. Turn heat down and simmer for about 3 hours or until beans are tender. Add more water as needed and stir occasionally. Make sure there is enough water in pot to make soup consistency and not too thick. Place a few cups at a time in a food processor (using the steel blade) or the blender and puree it until it is smooth. Add sour cream and reheat soup. Serve in individual bowls.Black beans or turtle beans are small but packed with a hearty flavor.
