Ingredients/Components

  • butter or margarine - 1/4 c
  • water - 4 c
  • shredded carrots - 1/3 c
  • chopped onion - 1/3 c
  • chopped celery - 1/2 c
  • rosemary leaves - 1/8 tsp
  • barley - 1/3 c
  • can stewed tomatoes, mashed - 1 lb
  • lentils, rinse well - 1/2 c

How to make lentil and barley soup:

Melt butter; cook onion and celery. Add tomatoes, water, lentils and barley (salt and pepper to taste). Cover tightly and boil gently for 45 minutes. Stir often. Add carrots and cook 5 minutes more. If thinner stew is desired, add 1 cup of water.
