Autumn bisque
Ingredients/Components
- salt - 1 tsp
- flour - 2 Tbsp
- butter - 1/4 c
- light cream - 1/2 c
- chopped onion - 1/2 c
- sage - 1/2 tsp
- grated Cheddar cheese - 1 c
- pepper to taste - 1 item
- thyme - 1 tsp
- finely chopped celery - 1/2 c
- rosemary - 1/4 tsp
- turmeric - 1/4 tsp
- large apples, chopped - 2 item
- pinch of nutmeg - 1 item
- chicken or turkey stock - 7 c
- chopped leek - 1/2 c
- peeled, diced butternut squash - 4 c
How to make autumn bisque:
Saute vegetables and apples in butter. Stir in flour and cook. Add stock and simmer 10 minutes. Add squash and cook. Add seasonings. Add cider and cream; heat through. Remove from heat. Stir in cheeses. Garnish with croutons.Recipe categories: Potato, Soups & stews, Bisques/cream soups.
