Ingredients/Components

  • salt - 1 tsp
  • flour - 2 Tbsp
  • butter - 1/4 c
  • light cream - 1/2 c
  • chopped onion - 1/2 c
  • sage - 1/2 tsp
  • grated Cheddar cheese - 1 c
  • pepper to taste - 1 item
  • thyme - 1 tsp
  • finely chopped celery - 1/2 c
  • rosemary - 1/4 tsp
  • turmeric - 1/4 tsp
  • large apples, chopped - 2 item
  • pinch of nutmeg - 1 item
  • chicken or turkey stock - 7 c
  • chopped leek - 1/2 c
  • peeled, diced butternut squash - 4 c

How to make autumn bisque:

Saute vegetables and apples in butter. Stir in flour and cook. Add stock and simmer 10 minutes. Add squash and cook. Add seasonings. Add cider and cream; heat through. Remove from heat. Stir in cheeses. Garnish with croutons.
