Mushroom barley soup
Ingredients/Components
- milk - 1/2 c
- flour - 1 Tbsp
- margarine - 2 Tbsp
- chicken broth - 3 c
- salt and pepper to taste - 1 item
- sliced mushrooms - 1/2 lb
- sliced onion - 1/2 c
- sliced carrot - 1/2 c
- cooked chicken or turkey
- medium pearled barley - 1/2 c
How to make mushroom barley soup:
In large saucepan, saute vegetables in margarine for 10 minutes. Stir in flour. Add the broth and heat, stirring constantly, until mixture comes to a boil. Add barley. Cover and simmer until barley is cooked through (about 1 hour). Stir in milk, meat, salt and pepper. Heat through and serve.Recipe categories: Low protein, Soups & stews, Pasta, rice and grains.
