Ingredients/Components

  • milk - 1/2 c
  • flour - 1 Tbsp
  • margarine - 2 Tbsp
  • chicken broth - 3 c
  • salt and pepper to taste - 1 item
  • sliced mushrooms - 1/2 lb
  • sliced onion - 1/2 c
  • sliced carrot - 1/2 c
  • cooked chicken or turkey
  • medium pearled barley - 1/2 c

How to make mushroom barley soup:

In large saucepan, saute vegetables in margarine for 10 minutes. Stir in flour. Add the broth and heat, stirring constantly, until mixture comes to a boil. Add barley. Cover and simmer until barley is cooked through (about 1 hour). Stir in milk, meat, salt and pepper. Heat through and serve.
