Bell pepper casserole
Ingredients/Components
- salt - 1/2 tsp
- water - 1/2 c
- chopped onion - 1/3 c
- dash of pepper - 1 item
- hamburger meat - 1 lb
- can tomatoes - 1 lb
- Cheddar cheese, grated - 4 oz
- uncooked rice - 1/2 c
- chopped bell pepper - 1/4 c
- bell peppers enough to cover bottom of dish - 1 item
How to make bell pepper casserole:
Line bottom of a 7 1/2 x 11-inch Pyrex dish with bell peppers which have been cut into quarters and boiled for 5 minutes. Brown hamburger meat, salt, pepper, onion and chopped bell pepper. Drain off grease. Add tomatoes, water and rice. Cover and simmer 20 minutes, until rice is tender. Add grated cheese. Pour over bell peppers in Pyrex dish. Cover with grated cheese and bake, covered, at 350° for 20 to 25 minutes. (May be baked in microwave for about 10 minutes, if desired.)Recipe categories: < 60 mins, Side dish, Casseroles.
