Ingredients/Components
- chili powder - 1 tsp
- sliced green onions - 1/3 c
- can whole kernel corn, drained - 8 oz
- cloves garlic - 2 item
- lean ground beef - 3/4 lb
- ground cumin - 2 tsp
- picante sauce - 1/2 c
- shredded cheese - 1 c
- flour tortillas - 12 item
- can tomatoes, drained and chopped - 8 oz
- can black or pinto beans, rinsed and drained - 16 oz
How to make beef and bean enchiladas:
Brown ground beef with minced garlic. Add 1/2 cup picante sauce, tomatoes, beans, corn, cumin and chili powder. Mix well. Cook, uncovered, stirring frequently 5 minutes or until most of the liquid has evaporated. Stir in green onions. SpoRecipe categories: Main dish, Ground beef, Beef.
