Baked stuffed zucchini
Ingredients/Components
- egg - 1 item
- butter or oleo - 6 Tbsp
- shredded Mozzarella cheese
- large onion, chopped - 1 item
- can mushrooms, drained - 1 item
- seasoned bread crumbs - 1 c
- small zucchini - 3 item
How to make baked stuffed zucchini:
Cut zucchini lengthwise. Scoop inside out with a teaspoon. Set aside. Boil shells for 3 minutes. Fry onion, zucchini scoopings and drained mushrooms in butter or oleo. Remove from oleo into a bowl. Add egg and bread crumbs. Mix. Sprinkle cheese over top and bake at 400° for 1/2 hour. Bake in a long Pyrex dish.Recipe categories: Low protein, Side dish, Vegetables.
