Ingredients/Components

  • lemon juice - 1 Tbsp
  • egg, beaten - 1 item
  • paprika - 1 item
  • medium onion, finely chopped - 1 item
  • diced celery - 1/2 c
  • clam juice - 1/4 c
  • seasoned bread crumbs - 1/4 c
  • crushed crackers
  • margarine, divided - 4 Tbsp
  • flounder fillets - 8 item
  • seafood use scallops or shrimp - 1 c

How to make baked stuffed flounder:

In skillet, heat 2 tablespoons margarine. Saute onion and celery for 5 minutes. Add cracker crumbs, egg, clam juice, lemon juice and seafood. Spread some of the mixture on each fillet and roll up. Place, seam side down, in a greased baking pan. Combine seasoned bread crumbs with 2 tablespoons melted margarine. Sprinkle over fish rolls. Sprinkle with paprika. Bake at 400° for 25 minutes or until fish flakes when tested with a fork. Serve with lemon wedges.
