Ingredients/Components

  • milk - 3 c
  • butter or margarine - 3 Tbsp
  • snipped parsley - 2 Tbsp
  • chicken broth - 3 c
  • white pepper - 1/8 tsp
  • slices cooked bacon, crumbled - 8 item
  • half and half or light cream - 1 c
  • potatoes, peeled and sliced - 2 lb
  • medium yellow onions, sliced - 2 item

How to make bacon and potato soup:

Melt butter (margarine). Add sliced onion (do not brown). Cook gently. Add potatoes and white pepper. Pour milk and broth over potatoes. Cover and cook gently for 20 to 25 minutes, or until potatoes are very tender.

Using slotted spoon, remove potatoes and onions. Put mixture (potatoes and onions) in blender and puree. Return mixture in saucepan and add half and half or cream. Gently reheat soup. (Do not boil.) Ladle soup in individual bowls and sprinkle bacon and parsley.
