Ingredients/Components

  • eggs - 2 item
  • pkg - 1 oz
  • milk
  • butter or margarine - 1/4 c
  • salt - 1/4 tsp
  • flour - 1 c
  • oil - 1 Tbsp
  • light cream - 3/4 c
  • chopped onion - 1/4 c
  • snipped parsley - 2 Tbsp
  • chicken broth
  • shredded sharp Cheddar cheese - 1/2 c
  • chopped ripe olives - 2 Tbsp
  • dry sherry - 1/4 c
  • can salmon, drained, boned and flaked - 1 3/4
  • cubed cooked chicken - 2 c
  • shredded sharp American cheese - 2 c
  • Heat a lightly greased 6-inch skillet; remove from heat
  • In saucepan, cook onion in butter until tender, but not brown
  • fresh mushrooms, halved 2 c - 5 oz

How to make crepes:

In a bowl, combine flour, milk, eggs, oil and salt; beat with a rotary beater until blended. Heat a lightly greased 6-inch skillet; remove from heat. Spoon in about 2 tablespoons batter; lift and tilt skillet to spread evenly. Return to heat; brown on one side only. To remove, invert over paper toweling. Repeat with remaining batter to make 12 crepes, greasing skillet occasionally.Salmon-Broccoli Crepes:12 Crepes (see Crepes recipe)1/4 c. chopped onion1/4 c. butter or margarine1/4 c. flour1/4 tsp. salt2 1/4 c. milk2 c. shredded sharp American cheese1 (10 oz.) pkg. frozen chopped broccoli1 (7 3/4 oz.) can salmon, drained, boned and flaked Prepare Crepes; set aside. In saucepan, cook onion in butter until tender, but not brown. Stir in flour and salt. Add milk; cook and stir until thickened and bubbly. Add cheese; stir until melted. Remove from heat. Cook broccoli according to package directions; drain. Cut up any large pieces; fold in salmon and 3/4 cup of the sauce. Spoon about 3 tablespoons salmon mixture onto unbrowned side of each crepe; roll up. Place crepes seam side down in a 12 x 7 1/2 x 2-inch baking dish; pour remaining sauce over crepes. Bake, covered, at 375° until heated through, 20 to 25 minutes.
