Avocado cream



  • salt and pepper - 1 item
  • avocados, diced - 3 c
  • lime juice or lemon - 1/4 c
  • minced chives or parsley - 1 item
  • chicken stock free of any fat - 4 c

How to make avocado cream:

Place chicken stock, avocados and lime juice in a blender or food processor. Whirl until smooth. (This is easiest done in two batches.) Add salt and pepper to taste and chill, covered, in the refrigerator for an hour or more. Serve in chilled soup plates garnished with chives or parsley. Serves 6.
