Ingredients/Components

  • red wine vinegar - 1/3 c
  • salt and pepper to taste - 1 item
  • olive oil - 2 Tbsp
  • ground cumin - 1 Tbsp
  • dried oregano - 1 tsp
  • minced garlic - 1 Tbsp
  • fresh lime juice - 1/4 c
  • chile powder - 1 tsp
  • red onion, finely diced - 1 item
  • kernels - 3 ears
  • firm ripe avocados, peeled, pitted and diced - 2 item
  • red bell pepper, seeded and finely diced - 1 item

How to make avocado and corn salsa:

Blanch corn in boiling water for 3 minutes. Drain and cool under cold water. Cut the kernels from the cobs and place in a large bowl. Add all the other ingredients and mix well. Serve with warm tortillas.
