Avocado and corn salsa
Ingredients/Components
- red wine vinegar - 1/3 c
- salt and pepper to taste - 1 item
- olive oil - 2 Tbsp
- ground cumin - 1 Tbsp
- dried oregano - 1 tsp
- minced garlic - 1 Tbsp
- fresh lime juice - 1/4 c
- chile powder - 1 tsp
- red onion, finely diced - 1 item
- kernels - 3 ears
- firm ripe avocados, peeled, pitted and diced - 2 item
- red bell pepper, seeded and finely diced - 1 item
How to make avocado and corn salsa:
Blanch corn in boiling water for 3 minutes. Drain and cool under cold water. Cut the kernels from the cobs and place in a large bowl. Add all the other ingredients and mix well. Serve with warm tortillas.Recipe categories: Appetizers, Dips, Corn.
