Cream of carrot soup
Ingredients/Components
- flour - 3 Tbsp
- butter - 3 Tbsp
- chopped fresh parsley - 1 Tbsp
- medium onion - 1 item
- basil - 1/2 tsp
- salt and pepper - 1 item
- chicken stock - 5 c
- celery stalk - 1 item
- carrots, pared and thinly sliced - 6 item
How to make cream of carrot soup:
Heat butter in saucepan over medium heat. Add onion. Cover and cook 5 minutes over low heat. Add carrots, celery, basil and parsley. Season well. Mix and cook 6 minutes. Partly cover over medium heat.Mix in flour until well blended. Pour in chicken stock and bring to a boil, partly covered. Reduce heat to low and cook 20 minutes. Pass soup through food mill or puree in blender.
