Zucchini stew
Ingredients/Components
- carrots, sliced thin - 2 item
- ribs celery, sliced thin - 2 item
- green pepper, sliced thin - 1 item
- onion, sliced thin - 1 item
- oil - 2 Tbsp
- can tomato sauce - 1 oz
- can water - 1/2 item
- parsley flakes - 1 tsp
- basil - 1 tsp
- pinch of oregano - 1 item
- garlic powder to taste - 1 item
- medium zucchini, sliced in 1/4-inch slices - 2 item
- salt and pepper to taste - 1 item
How to make zucchini stew:
Saute first 4 ingredients in oil until almost tender. Add tomato sauce, water, parsley, basil, oregano, garlic powder, salt and pepper. Add zucchini and cook this together until the zucchini is done.You may have to add a little water as this cooks as it may thicken too much. You can add corn to this if you like.
