Ingredients/Components

  • sugar - 6 c
  • salt - 5 Tbsp
  • cider vinegar
  • pepper - 1/2 tsp
  • onions - 4 c
  • peeled zucchini squash - 10 c
  • each: nutmeg and turmeric - 1 Tbsp
  • each: cornstarch and celery seed - 2 Tbsp

How to make zucchini relish:

Grind the first 2 ingredients together. Add salt. Let stand overnight. Drain and rinse in cold water; drain again. Be sure all water is off or relish will be thin. Add remaining ingredients. Cook 30 minutes. Watch and stir often while cooking. Seal in pint jars.

Note: Red and green peppers may be added for coloring.
