Zucchini relish
Ingredients/Components
- sugar - 6 c
- salt - 5 Tbsp
- cider vinegar
- pepper - 1/2 tsp
- onions - 4 c
- peeled zucchini squash - 10 c
- each: nutmeg and turmeric - 1 Tbsp
- each: cornstarch and celery seed - 2 Tbsp
How to make zucchini relish:
Grind the first 2 ingredients together. Add salt. Let stand overnight. Drain and rinse in cold water; drain again. Be sure all water is off or relish will be thin. Add remaining ingredients. Cook 30 minutes. Watch and stir often while cooking. Seal in pint jars.Note: Red and green peppers may be added for coloring.
