Ingredients/Components

  • sugar - 6 c
  • cornstarch - 2 Tbsp
  • cider vinegar
  • dry mustard - 1 tsp
  • celery seed - 2 tsp
  • pickling salt - 1 c
  • turmeric powder - 2 tsp
  • coarsely ground zucchini - 10 c
  • ground onion
  • large green pepper, coarsely ground - 2 item
  • large red peppers coarsely ground - 2 item

How to make zucchini relish:

Wash zucchini, remove seed and pithy parts, but leave on rind when grinding. Combine zucchini and onion; stir in pickling salt and let stand overnight.

Next day, wash through 2 waters and drain well. Place in large pan and add remaining ingredients. Bring to boil and cook 20 minutes on low heat; stir often. Seal in jars while hot or freeze after it cools.
