Zucchini relish
Ingredients/Components
- sugar - 6 c
- cornstarch - 2 Tbsp
- cider vinegar
- dry mustard - 1 tsp
- celery seed - 2 tsp
- pickling salt - 1 c
- turmeric powder - 2 tsp
- coarsely ground zucchini - 10 c
- ground onion
- large green pepper, coarsely ground - 2 item
- large red peppers coarsely ground - 2 item
How to make zucchini relish:
Wash zucchini, remove seed and pithy parts, but leave on rind when grinding. Combine zucchini and onion; stir in pickling salt and let stand overnight.Next day, wash through 2 waters and drain well. Place in large pan and add remaining ingredients. Bring to boil and cook 20 minutes on low heat; stir often. Seal in jars while hot or freeze after it cools.
