Zucchini relish
Ingredients/Components
- sugar
- salt
- cornstarch
- nutmeg - 2 tsp
- grated zucchini - 5 c
- dry mustard - 2 tsp
- diced green pepper - 1 c
- black pepper - 1/4 tsp
- celery salt - 1 tsp
- white vinegar
- turmeric
- grated onions - 2 c
- diced red pepper - 1 c
How to make zucchini relish:
Place zucchini, onions and salt in a large bowl. Mix well and cover. Refrigerate overnight. The next day, drain well and rinse under cold water. Drain for 1 hour. Place mixture in a heavy pot with remaining ingredients. Bring to a boil and simmer, stirring occasionally, 30 minutes. Cool and store, covered, in refrigerator up to 4 weeks; or fill 3 to 4 pint jars, seal and process in boiling water for 10 minutes.
