Zucchini jack casserole
Ingredients/Components
- eggs - 4 item
- milk
- salt - 1 tsp
- flour - 3 Tbsp
- baking powder - 2 tsp
- butter or margarine, melted - 3 Tbsp
- clove garlic, minced - 1 item
- small onion, finely chopped - 1 item
- chopped parsley - 1/4 c
- can diced green chiles - 1 oz
- seasoned croutons - 1 c
- zucchini about 8 small - 2 lb
- Jack cheese, shredded about 4 c - 3/4 lb
How to make zucchini jack casserole:
Slice zucchini crosswise, 1/4 inch thick (about 7 cups). In large bowl, beat together eggs, milk, salt, baking powder and flour until smooth. Stir in parsley, garlic, onion, green chiles, cheese and zucchini. Spoon into a greased 9 x 13-inch baking dish. Toss croutons in the melted butter and sprinkle on top. Bake uncovered in 350° oven for 35 to 40 minutes, until set in center and squash is tender. Let stand about 10 minutes before serving.
