  • eggs - 4 item
  • milk
  • salt - 1 tsp
  • flour - 3 Tbsp
  • baking powder - 2 tsp
  • butter or margarine, melted - 3 Tbsp
  • clove garlic, minced - 1 item
  • small onion, finely chopped - 1 item
  • chopped parsley - 1/4 c
  • can diced green chiles - 1 oz
  • seasoned croutons - 1 c
  • zucchini about 8 small - 2 lb
  • Jack cheese, shredded about 4 c - 3/4 lb

How to make zucchini jack casserole:

Slice zucchini crosswise, 1/4 inch thick (about 7 cups). In large bowl, beat together eggs, milk, salt, baking powder and flour until smooth. Stir in parsley, garlic, onion, green chiles, cheese and zucchini. Spoon into a greased 9 x 13-inch baking dish. Toss croutons in the melted butter and sprinkle on top. Bake uncovered in 350° oven for 35 to 40 minutes, until set in center and squash is tender. Let stand about 10 minutes before serving. Makes about 10 servings.
