Zucchini jack casserole
Ingredients/Components
- eggs - 4 item
- milk - 1/2 c
- baking powder - 2 tsp
- all-purpose flour - 3 Tbsp
- butter or margarine, melted - 3 Tbsp
- total - 8 small
- 1 lb - 4 c
- small onion, finely chopped - 1 item
- chopped parsley - 1/4 c
- clove garlic, minced or pressed - 1 item
- seasoned croutons - 1 c
- large can diced green chiles - 1 item
How to make zucchini jack casserole:
Slice zucchini into 1/4-inch thick rounds (about 7 cups); set aside. In a large bowl, beat eggs with milk, baking powder and flour until smooth. Stir in parsley, garlic, onion, chiles, cheese and zucchini. Spoon egg mixture into a greased 9 x 13-inch baking dish. Toss croutons in melted butter, then sprinkle over top. Bake, uncovered, in a 350° oven for 35 to 40 minutes or until a knife inserted in center comes out clean. Let stand at least 10 minutes before cutting.
