  • zucchini, shredded or chopped - 10 c
  • onions, diced - 4 item
  • salt - 5 Tbsp
  • red pepper - 1 item
  • green pepper - 1 item
  • sugar - 3 c
  • turmeric - 2 Tbsp
  • celery seed - 2 tsp
  • white vinegar
  • cornstarch - 3 Tbsp
  • dry mustard - 2 tsp
  • black pepper - 1/2 tsp
  • In a large pot or canner, mix the remaining ingredients

How to make zucchini chow-chow:

Let the first 5 ingredients set overnight and drain. In a large pot or canner, mix the remaining ingredients. Combine all ingredients and bring to a boil. Boil hard for about 4 minutes, stirring constantly so it doesn't stick. Pack into jars and seal.*SCTDiet:
