Ingredients/Components

  • sugar - 1/2 c
  • cinnamon - 1 tsp
  • vanilla - 1 tsp
  • nutmeg - 1/4 tsp
  • baking powder - 1 tsp
  • baking soda - 1/2 tsp
  • vegetable oil - 6 Tbsp
  • ground cloves - 1/4 tsp
  • egg white - 1 item
  • whole wheat flour - 3/4 c
  • unbleached white flour - 3/4 c
  • salt if desired - 1/4 tsp
  • whole egg - 1 item
  • packed, finely grated unpeeled zucchini 1 medium zucchini
  • fine chopped nuts, 1/3 c - 1/2 c

How to make zucchini bread(this is low-fat and low sugar.):

In a large bowl, combine whole wheat flour, white flour, sugar, baking soda, baking powder, salt, cinnamon, nutmeg and cloves. In a medium bowl, mix together the egg white, whole egg, oil, zucchini and vanilla. Add this mixture to flour mixture, stirring the ingredients to combine them well. Stir in nuts and/or raisins and/or sunflower seeds, if desired. Pour batter into a greased 9 x 5 x 3-inch loaf pan. Bake bread in a preheated 350° oven for 50 or 60 minutes, or until a pick inserted in the center of bread comes out clean. Yields 1 loaf.
