Ingredients/Components
- sugar - 1/2 c
- cinnamon - 1 tsp
- vanilla - 1 tsp
- nutmeg - 1/4 tsp
- baking powder - 1 tsp
- baking soda - 1/2 tsp
- vegetable oil - 6 Tbsp
- ground cloves - 1/4 tsp
- egg white - 1 item
- whole wheat flour - 3/4 c
- unbleached white flour - 3/4 c
- salt if desired - 1/4 tsp
- whole egg - 1 item
- packed, finely grated unpeeled zucchini 1 medium zucchini
- fine chopped nuts, 1/3 c - 1/2 c
How to make zucchini bread(this is low-fat and low sugar.):
In a large bowl, combine whole wheat flour, white flour, sugar, baking soda, baking powder, salt, cinnamon, nutmeg and cloves. In a medium bowl, mix together the egg white, whole egg, oil, zucchini and vanilla. Add this mixture to flour mixture, stirring the ingredients to combine them well. Stir in nuts and/or raisins and/or sunflower seeds, if desired. Pour batter into a greased 9 x 5 x 3-inch loaf pan. Bake bread in a preheated 350° oven for 50 or 60 minutes, or until a pick inserted in the center of bread comes out clean. Yields 1 loaf.Recipe categories: Breads, Low fat, Zucchini.
