Irish freckle bread
Ingredients/Components
- sugar - 1/2 c
- salt - 1/2 tsp
- flour
- water - 1 c
- eggs, beaten - 2 item
- stick margarine or butter, melted - 1 item
- ground mace - 1/2 tsp
- small potato - 1 item
- currants or raisins - 1 c
- envelopes dry yeast - 2 item
How to make irish freckle bread:
Cook potato in 1 cup water until tender. Mash potato and add water to make 1 cup and return to pan. Stir in currants. Cool to lukewarm. Put yeast into 1/2 cup warm water in large bowl. Stir until yeast dissolves. Stir in potato mixture, eggs, sugar and melted oleo. Stir in 2 cups flour with salt. Turn onto board. Knead until smooth. Place in greased bowl. Let rise 1 hour until double. Punch down. Divide in half. Makes two 8-inch round breads. Let rise again.
