  • eggs - 2 item
  • vanilla - 1/2 tsp
  • milk - 1/2 c
  • butter - 2 Tbsp
  • baking powder - 1 Tbsp
  • light brown sugar - 3/4 c
  • cake flour

How to make cranberry upside-down cake:

Spread butter evenly in bottom of 9-inch pan. Spread light brown sugar over the butter; pat it down. Spread cranberries over the sugar.

Preheat the oven to 350°. With an electric mixer, cream the sugar with 1/4 pound butter. Add eggs, egg yolk and vanilla; beat until smooth. Scrape the sides and bottom of the bowl. Sift the cake flour with the baking powder; add 1/2 of it to the batter. Add milk and remaining flour alternately. Pour the batter over cranberries. Tap the pan on counter to settle batter. Bake in preheated oven for 50 to 55 minutes. when done, run a knife around sides of the pan; invert to cool.

Optional extra: Chopped lemon rind or orange rind may be added to batter or topping.
