  • cinnamon - 2 tsp
  • vanilla - 2 tsp
  • nutmeg - 1/4 tsp
  • baking powder - 1 tsp
  • baking soda - 2 tsp
  • vegetable oil - 1 c
  • all-purpose flour - 2 c
  • chopped walnuts - 3/4 c
  • allspice - 1/2 tsp
  • egg white - 1 item
  • diced rhubarb
  • whole-wheat flour
  • whole eggs - 2 item
  • packed dark brown sugar
  • salt if desired - 1/4 tsp

How to make rhubarb bread:

In a medium bowl, combine the flours, baking soda, baking powder, salt, cinnamon, allspice and nutmeg. In a large mixing bowl, combine the egg white, whole eggs, oil, brown sugar and vanilla. Beat the mixture with an electric mixer on high speed until fluffy. Stir in the flour mixture until it is just moistened. Stir in the rhubarb and walnuts. Divide the batter between 2 greased 9 x 5 x 3-inch loaf pans. Bake in preheated 350° oven for about 50 minutes or until a pick inserted in the center comes out clean. Set the pans on a rack for 10 minutes, then turn out the loaves to cool completely. Makes 2 loaves.
