Ingredients/Components

  • sugar
  • eggs - 3 item
  • vanilla - 2 tsp
  • salt - 1 tsp
  • flour - 2 c
  • baking powder - 1/4 tsp
  • baking soda - 2 tsp
  • vegetable oil - 1 c
  • ground cinnamon - 3 tsp
  • medium zucchini - 3 item
  • raisins & walnuts - 1 c

How to make zucchini bread:

Beat eggs lightly in large bowl. Stir in oil, grated & well drained zucchini, sugar & vanilla. Sift flour, baking powder, soda, cinnamon & salt onto waxed paper. Stir in egg mixture until well blended, stir in raisins & nuts. Put into 2 well-greased loaf pans. Bake at 350° for 1 hour or until center springs back when touched with fingertip. Cool in pans on racks for 10 min. remove from pans and cool completely.

(This is delicious with cream cheese.)
