  • sugar - 2 c
  • eggs - 4 item
  • vanilla - 1 tsp
  • pkg - 1 oz
  • salt - 1/4 tsp
  • flour - 2 c
  • grated carrots - 3 c
  • baking powder - 2 tsp
  • baking soda - 2 tsp
  • vegetable oil
  • margarine, softened - 1/2 c
  • ground cinnamon - 2 tsp
  • Cream Cheese Icing - 1 item
  • Beat eggs and oil in small bowl

How to make carrot cake:

Grease and flour a 13 x 9-inch baking pan. Beat eggs and oil in small bowl. Combine flour, sugar, baking soda and powder, cinnamon and salt in a large bowl. Add egg mixture and mix well. Stir in carrots. Pour into pan and bake 30 to 35 minutes or until toothpick inserted into center comes out clean. Top with icing when cool.Cream Cheese Icing:1 (16 oz.) box powdered sugar1 (8 oz.) pkg. cream cheese, softened1/2 c. margarine, softened1 tsp. vanilla Combine ingredients in a medium bowl and beat until smooth.
