Ingredients/Components
- flour - 1 c
- stick butter - 1 item
- chicken broth - 8 c
- large onion, finely chopped - 1 item
- ribs celery, chopped - 2 item
- light cream or half and half - 1 c
- cooked rice 1 c - 3 c
- carrot, shredded or diced - 1 item
How to make wild rice soup:
Saute onion, carrot and celery in the butter. Add flour to thicken, then add chicken broth. Next, add rice; mix. Lastly add cream; do not boil. Cook slowly for up to 2 hours. A crock-pot works well on low heat for the 2 hour cooking.Recipe categories: Lunch/snacks, Soups & stews, Rice.
