Chicken stroganoff
Ingredients/Components
- cut up chickens - 2 item
- flour - 1 c
- paprika - 1 tsp
- pepper - 1/2 tsp
- salt - 1 Tbsp
- poultry seasoning - 2 Tbsp
- stick butter - 1/2 item
- mushrooms - 1 lb
- chicken broth - 3/4 c
- sour cream - 2 c
- chopped parsley - 1 item
How to make chicken stroganoff:
Mix flour and seasonings together. Roll chicken in flour. Keep remaining flour for later. Melt butter; brown chicken in butter. Add more butter if needed. Remove chicken; add mushrooms and fry for 5 to 8 minutes. Remove mushrooms; drain and set aside. Pour remaining drippings into baking dish. Add chicken, skin side up. Bake 35 to 40 minutes at 350°. Remove chicken. Put on warm platter. Pour drippings from pan into cup; let fat rise to top.Measure 3 tablespoons flour (with seasoning from before). Stir in chicken broth and cook over low heat until thick, stirring constantly. Add mushrooms and warm 1 minute. Add sour cream and heat briefly. Pour over chicken and sprinkle with parsley. Serve.
