Wild rice soup
Ingredients/Components
- butter - 6 Tbsp
- cans chicken broth - 3 3/4
- sliced mushrooms - 1/2 c
- slivered almonds - 4 Tbsp
- soft cream cheese - 8 oz
- finely grated carrots - 1/2 3/4
- cooked long grain and wild rice - 3 c
- each finely chopped onions, celery and green peppers - 1/2 3/4
- cooked turkey or ham cubes - 2 c
- milk or more to desired thickness
How to make wild rice soup:
Saute mushrooms, onions, celery, green peppers and carrots in butter. When tender, add broth, rice and meat. Boil for 5 minutes. Remove from heat and stir in cream cheese and milk. Stir until well blended. Cook on low heat until thoroughly heated, stirring occasionally. Do not boil. Just before serving, add the almonds.
