Wild rice salad
Ingredients/Components
- salt - 1 tsp
- water
- vegetable oil - 1/4 c
- fresh ground pepper to taste - 1 item
- chicken stock
- fresh orange juice - 1/3 c
- grated rind of 1 orange
- pecan pieces - 1 c
- small can mandarin oranges, drained - 1 item
- currants - 1 c
- uncooked wild rice - 1 c
- frozen baby peas, thawed - 10 oz
How to make wild rice salad:
Rinse rice in strainer under cold water. Combine with chicken stock and water. Bring to boil, reduce heat and simmer, uncovered, for 35 to 45 minutes. Rice should not be too soft. Drain. Combine rice with remaining ingredients. Mix well. Let stand 2 hours. Serve at room temperature.A lovely buffet or summertime dish.
