Wild rice chicken salad
Ingredients/Components
- boiling water - 3 c
- salad dressing - 1 c
- minced onion - 1 tsp
- green pepper, chopped - 3 Tbsp
- cooked chicken, cubed - 2 c
- celery, chopped - 1 c
- sweet pickle relish - 2 Tbsp
- wild rice - 1 c
- pimiento, chopped - 1 c
- sliced almonds optional - 1 item
- granulated chicken bouillon - 3 Tbsp
How to make wild rice chicken salad:
Preheat oven to 450°. Thoroughly rinse wild rice. Put into 9 x 13-inch pan. Dissolve chicken bouillon in boiling water and pour over rice. Cover pan tightly, put into oven and turn off. Leave overnight. Drain off any liquid left. Add remaining ingredients and chill. Serve on lettuce. Serves 8.Recipe categories: Lunch/snacks, Chicken, Main dish.
