  • sugar - 2 c
  • eggs - 4 item
  • vanilla - 1 tsp
  • butter or margarine - 1 c
  • salt - 1/4 tsp
  • coconut - 1 c
  • buttermilk - 1 c
  • baking powder - 1 tsp
  • pecans, chopped - 1 c
  • or 2 sticks butter - 1 c
  • white chocolate, melted over hot water - 1/4 lb
  • cake flour I use plain
  • Add melted chocolate, then the eggs, one at a time, beating well after each addition
  • small can condensed milk like Carnation or any kind - 1 item

How to make white chocolate cake:

Cream together the butter and sugar until light. Add melted chocolate, then the eggs, one at a time, beating well after each addition. Sift flour, salt and baking powder together. Then add to the batter alternately with the buttermilk, beating well. Fold in pecans and coconut. Pour into two greased and floured 9-inch cake pans. Bake at 350° for 45 minutes. (I bake in 3 pans until done, about 25 minutes.)Icing:2 c. sugar1 c. or 2 sticks butter1 small can condensed milk (like Carnation or any kind)1 tsp. vanilla1/4 tsp. salt Combine all ingredients and let stand one hour, stirring occasionally. Then cook to soft ball stage; cool to lukewarm. Beat until spreading consistency is reached. Then spread on cake, top and sides.
