Watermelon rind pickles
Ingredients/Components
- sugar - 8 lb
- vinegar
- whole cloves - 2 Tbsp
- whole allspice - 2 Tbsp
- watermelon rind - 10 lb
How to make watermelon rind pickles:
Soak rind overnight in lime water (2 tablespoons lime to 1 gallon water). Take out and soak in salt water for 20 minutes. Boil in clear water for 20 minutes. Boil in mixture of vinegar, sugar and spices until you can stick a fork in the rind. Put into scalded jars and seal.Recipe categories: Lunch/snacks, Appetizers, Melons.
