Vegetable soup
Ingredients/Components
- salt - 2 tsp
- water - 4 c
- minced parsley - 1 Tbsp
- diced celery - 1/4 c
- diced carrots - 1/4 c
- tomatoes - 2 c
- sliced potatoes - 1/4 c
- chopped green beans - 1/4 c
- soup meat or soup bone - 1 lb
- washed rice or barley - 1/4 c
How to make vegetable soup:
Place meat in 5-quart pressure cooker. Add remaining ingredients except parsley. Close cover securely. Place pressure regulator on vent pipe. Cook 20 minutes with pressure regulator rocking slowly. Let the pressure drop off of own accord. Add parsley to soup just before serving. Yields 4 to 6 servings.Recipe categories: < 4 hours, Weeknight, Soups & stews.
