Vegetable lasagna



  • salt - 1/4 tsp
  • flour - 1/4 c
  • nutmeg - 1/8 tsp
  • pepper
  • minced parsley - 2 tsp
  • chopped spinach - 1 pkg
  • carrot, shredded - 1 item
  • box lasagna noodles - 1 item
  • grated cheese Parmesan - 1/4 c
  • Egg Beaters - 2 or
  • each: chopped onion and celery - 1 c
  • Ricotta cheese part skim - 1 lb
  • can skim evaporated milk - 1 item
  • Add vegetables and salt in other bowl

How to make vegetable lasagna:

Mix Ricotta, eggs, pepper, grated cheese, nutmeg and parsley in large bowl. Add vegetables and salt in other bowl. Cook noodles according to directions on box.

Make White Sauce.White Sauce:1/2 c. chicken broth1 can skim evaporated milk1/4 c. flour1/8 tsp. pepper Mix broth with milk and cook on low heat. Add flour and pepper and continue to cook until it thickens. Layer vegetables, cheese mixture and noodles. Sprinkle Mozzarella cheese over top. Bake at 350° for 35 to 40 minutes. Cover with foil before baking.
