Vegetable stroganoff



  • sour cream - 3 c
  • butter - 2 Tbsp
  • chopped onion - 1 c
  • plain yogurt
  • dill weed - 1/2 tsp
  • sweet paprika - 1/4 tsp
  • dash of soy sauce - 1 item
  • mushrooms, chopped - 1/2 lb
  • scallions, minced - 6 item
  • raw noodles - 4 c
  • chopped veggies broccoli, carrots, cauliflower, cabbage, peppers, cherry tomatoes, zucchini - 6 c

How to make vegetable stroganoff:

Saute onion and mushrooms in 2 tablespoons butter until the onion is soft, but not brown.

Combine onion, mushrooms, sour cream, yogurt, dill weed, soy sauce and paprika in the top of a double boiler. Heat gently for about 30 minutes.

Steam veggies until just barely tender. Cook noodles in boiling water until tender. Drain and toss with 2 tablespoons of butter. Place the noodles on a large platter. Ladle steamed veggies and noodles. Pour sauce over veggies and noodles. Garnish with minced scallions. Serves 6.
